Perfect Pesto Pizza

It’s hard to enjoy hot food on these hot summer days, but while scrolling through the pages of our Pinterest, I found this Grilled Pesto and Goat Cheese Pizza that could be the perfect snack served hot or cold.   

      INGREDIENTS:
Crust
Pesto
Goat Cheese
Sautéed Mushrooms
Sliced Tomatoes

        PREPARATIONS:

Instead of dodging carts at the grocery store, stroll down to the local Boulder’s Farmer’s Market and pick up a crust or two from the Breadworks stand.  Then make your way down the main isle of vendors where you will find homemade Pesto,  organic Goat Cheese from the Haystack Mountain Goat Dairy, Mushrooms from the Hazel Dell Mushroom stand, and Tomatoes from any organic vendor.

First, lay out the crust.  Next, spread the Pesto evenly on the surface of the crust, then crumble or spread the Goat Cheese over the surface with the Pesto showing through.  Last, place the tomatoes on top and sprinkle the sautéed mushrooms around.

After mastering the art of pizza making, wrap it up, and bring it down to Pearl Street on Wednesday evenings to sit back, relax, and enjoy Bands on the Bricks with a Beer Garden nearby.
