My Downtown Dining Wishlist

Good Day Downtown Boulder,

It always piques my interest to see the wild, clever, and downright delicious things that downtown  restaurants whip up. So naturally, I’ve started a little dining “wishlist” of spots I’m dying to try. A few spots are still on my “one day” list, but that doesn’t stop me from dreaming…or crossing my fingers that my older sister picks up the tab.

This past summer I attended a global seminar with CU Boulder in Paris! It was quite the amazing journey and the food was incroyable (as the French say). Often I find myself reminiscing on the plates that blessed my presence while I was abroad. Brasserie Ten Ten’s menu takes me back. Top of my “must try” list includes their Poulet de Campagne which is seared chicken breast, dijon creamed leeks, trumpet mushrooms, artichoke melange, and an orange scented chimichurri sauce. I have also been peeking into Maisonette, their pastries and breads look like something out of a Parisian movie. I am actively dreaming of their Parisian Flan and Maisonette Macarons.

In addition to French cuisine, another restaurant on my wishlist is Cozobi Fonda Fina. I must try their Tostada De Atun which features Bluefin Tuna, Smashed Avocado, Chicatana Mayonnaise and Salsa Macha. What an insane lineup of ingredients. Their Aguachile De Hamachi which includes Japanese Hamachi, Blood Orange, Crispy Leeks, and Chile Piquin also sounds incredible.  I just know my mouth would thank me after dinner here. 

Year after year I notice my taste palette goes through a stage of growth. Believe it or not, I used to refuse tomatoes and onions, fresh seafood, and anything that had a weird texture. Which is unbelievable to me now since I love all veggies, proteins and dishes. With my refined palate growing more adventurous  Jax Fish House & Oyster Bar’s menu is incredibly appealing. Especially their Fried New England Calamari with Mango Chile Mojo and Lime Aioli and their Thai Black Cod with roasted sweet potato, thai red curry, and carrot-daikon slaw.  My mouth is watering just writing this blog

These places live in my mind 24/7, but I’ve decided to play the long game: one for my birthday, one for graduation, and one for when I (hopefully) land a job, because that absolutely deserves a celebratory dinner. Downtown has so many incredible spots, and I can’t wait to keep growing this list and crossing each one off, one tasty milestone at a time.
