Luna Cultura, in partnership with the Museum of Boulder, invites you to commemorate Indigenous Peoples' Day with an event of art, culture, music, tradition, pre-Hispanic Mexican cuisine, and activism.

Pre-Hispanic era: The roots of Mexican cuisine can be traced back to the pre-Hispanic era when indigenous civilizations like the Mayans, Aztecs, and other Mesoamerican cultures thrived. They cultivated and consumed a variety of foods, including corn (maize), beans, squash, tomatoes, avocados, chilies, and chocolate. These staples continue to play a significant role in Mexican cooking today. -Medium.com
