Hello from Boulder!
With the busy holiday season upon us, and the year coming towards an end, it can be hard to catch a break and take time to relax. For me, finals are in the near-future, and stress levels are high! Luckily, amongst the commotion, I was able to attend a tasting at The Post Brewing Co. The Post recently opened a new location in Boulder, and with a slogan like “Hot Chicken Loves Cold Beer,” you know you’re in for a treat.
As a self-proclaimed foodie, I was thrilled to try out The Post with a few other Downtown Boulder teammates. The restaurant’s General Manager, Matt, welcomed us with open arms and created an environment that felt like family. Our meal was complete with ALL of The Post’s signature menu items. Matt started us off with whiskey gravy-back shots, which featured their housemade gravy. Now I would not typically opt for shots of whiskey, but I just couldn't decline, and the gravy-back made the shot surprisingly tolerable.
We also got a taster of The Post’s 5 signature beers, which are crafted to be paired wit specific menu items. After a delicious appetizer platter, I was already impressed. We all shared dishes family-style, which included their 10 piece fried chicken bucket in addition to many of their amazing sides (I could not recommend the green chili mac and cheese enough!) Matt also included their special of the night, a pot-roast poutine, which was my absolute favorite dish.
After a meal that left me full for days, I sat back to take in my surroundings. The Post radiates a warm atmosphere from the second you walk in. From the decor that feels like home, to the friendly staff, The Post has an ambiance perfect for socializing over some quality food and drinks. Matt and staff could not have been more welcoming, and we thank then all for the all-around amazing experience.
I can’t wait to take my friends here and show them what The Post is all about. I am really excited to try out their brunch, which is offered Friday-Sunday starting at 9am. Also, don’t miss out on their happy hours, M-F from 4 - 6pm and Saturday & Sunday from 3 - 6pm!
