Chef's Day Off with Spruce Farm & Fish
John Payne is the Executive Chef and Food & Beverage Director at Spruce Farm & Fish and the historic Hotel Boulderado. First off, can someone please tell me what a “day off” is? LOL! Seriously though, when I do have a day off, I start my morning at Ozo for their amazing Lattes. There’s something so relaxing about sitting on Pearl street watching the people in the early morning with a great cup of coffee. Then I’ll stroll over to Spruce Confections to check out what the day’s freshest pastries are. In my book, they have some of the best, freshest confections around.
By now its probably about 11 am and I’ll meet up with my girlfriend and we’ll head over to the Farmer’s Market (in the summer of course) to pick out some amazing fresh herbs, vegetables, cheeses and whatever other goodies they have that particular week.
Before calling it an early night (as a Chef I am an early riser, so bedtime comes early), we’ll head over to Bramble and Hare for an early dinner. I love this place…. They have their own farm and their Chef is always there to chat and tell us all about their specials. That’s the perfect Boulder day!
