Phil Dumontet and Alexa Squillaro first traveled to Boulder for the Colorado Triathlon in June 2017, and once they arrived they decided to never leave. Taken by the idyllic beauty of the city mixed with the outdoor and active lifestyle of residents, Phil and Alexa made the move from the Northeast to the West. Phil had just sold his Dashed business (an independent restaurant delivery service), and the timing was right for the couple to start fresh in a new state.
Determined to begin a business venture aligned with their passions, the two realized there was a gap in the market for juice businesses. In 2017, their dreams became a reality when they opened Whole Sol in the LoDo neighborhood of Denver. Then, two years later, they opened a second location in Boulder on the iconic Pearl Street Mall.
“Our goal is to make the healthy choice the easy choice,” said Phil. “We create foods from smoothies to soups to toasts that are as delicious as they are good for you. We want customers to walk out feeling better than when they walked in - from athletes post-workout to the workforce grabbing a quick bite during lunch.”
Not only does Whole Sol pride itself on equally tasty and healthy flavors, but they also strive to be completely transparent about ingredients. “We are the only USDA organic juice bar in Boulder. We take sourcing our single-ingredient foods really seriously, and we make everything from scratch. Catering to a variety of diets and dietary restrictions is essential to our business.”
Phil and Alexa had a hunch that Whole Sol would be well-received with local Boulderites. “This is such an active community, and it really aligns perfectly with our own personal values. We knew this concept would resonate well with the people that live here. And we’ve found the downtown business community to be incredibly supportive and collaborative.”
The couple became so passionate about the Boulder wellness community that they decided to go one step further than Whole Sol. “I’m an avid marathon runner and I was surprised to find that there was no signature marathon for such a health-conscious community. For three years, I worked to bring a marathon here, and in 2021, I was able to make Boulderthon happen. The experience was incredible, and I am beyond thrilled to make Boulderthon a yearly occurrence downtown.”
